Apple Coffee Cake

Ingredients:

  • 2 medium apples peeled, cored and cut into small chunks (you could rehydrate 2 C of dried apples in boiling water)
  • 1 tsp lemon juice
  • 1/2 Cup butter or margarine
  • 1/4 Cup sugar
  • 2 eggs
  • 1 1/2 Cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 C milk
  • 1 tsp vanilla extract

Topping:

  • 1/3 C sugar
  • 2 tsp cinnamon

Directions:

  1. Preheat oven to 325 F.
  2. Sprinkle cut apples with lemon juice to prevent browning.
  3. Cream butter and sugar, add eggs one at a time and beat well.
  4. Sift flour, baking powder and salt.
  5. Alternate adding dry ingredients and the milk to the butter and sugar mixture.
  6. Add vanilla and mix well.
  7. Grease and flour a 9 inch square cake pan.
  8. Pour batter into pan and top with the cut apples.
  9. Mix together the sugar and cinnamon topping mix and sprinkle over the apples.
  10. Bake at 325 for 40-45 min until done.
