- 2 lbs yellow squash, sliced
- 1 large onion, chopped
- 2 eggs, beaten
- 1 cup cheddar cheese, grated
- 1/3 cup Hellman’s mayonnaise
- Boil squash and onion in salted water until tender. Drain & mash.
- Add remaining ingredients and pour into buttered casserole dish.
- Cover with foil and bake at 325 F until firm.
