Salmon Cakes with Aioli

Ingredients:

Salmon Cakes

  • 3 TBSP vegetable oil
  • 1/2 sweet onion, diced
  • 1 medium carrot, diced finely
  • 1 rib celery, diced finely
  • 2 cans (7.5 oz each) Pink Salmon
  • 1 cup plain bread crumbs
  •  1 1/4 tsp Old Bay seasoning
  • 1 tsp Dijon mustard
  • 1/4 tsp cayenne pepper
  • 1/4 cup light mayonnaise
  • 1/4 cup parsley, chopped
  • 1 TBSP lemon juice
  • 1 head lettuce, chopped
  • dressing for salad
